Rick Stein offers up Spanish mussels recipe

Budding chefs looking for adventurous recipes have been encouraged to try a mussels dish with a Spanish twist by celebrity chef Rick Stein. 

Once finished, the mussels should work as a main dish as well as part of a tapas, with the classic Spanish dish topped with a tomato vinaigrette.

In his article in the Daily Mail, Mr Stein advises chefs to cook the mussels in a large pan with a little water until they begin to open.

Break off the top half of the shell and loosen the meat inside, meanwhile make the dressing by blending the tomatoes until smooth, add in vinegar, oil, sea salt, black pepper and mix the solution.

Stir in some diced capers, gherkins, red onions, peppers and parsley, then spoon over the mussels.
