Black pudding inspires traditional foods

Chefs could turn to traditional foods as a source of ideas

Caterers who are stuck for ideas on how to introduce inspirational recipes to their menus could turn to traditional foods.

This could be a successful move, as it can coincide with consumer demand, which means diners are likely to come back for more should the resulting meals prove popular.

For instance, black pudding is believed to be having a resurgence, with sales picking up considerably following endorsements from celebrity chefs.

"Black pudding is not just for breakfast any more," said Duncan Haigh, owner of Doreen's Black Pudding seller Arthur Haigh, adding: "A lot of chefs are using it because they realise it brings richness to a dish. It's now found in starters and main courses."

McCormick's resident expert Chef Steve says researching other culinary cultures is one of his key sources of inspiration - and there is no reason why professionals cannot apply this approach to the food fashions of the past.
