Garlic is essential for endive with pancetta

Garlic is highly versatile

There are so many way for professional caterers to bring a unique twist to a dish that it can be difficult to know where to start.

Our resident expert Chef Steve says that one of his favourite methods of experimentation is to try daring new combinations of culinary herbs and spices.

Indeed, these ingredients offer a high degree of versatility that means they have something to offer almost any dish.

In an article for the Independent, celebrity chef Bill Granger shared his recipe for endive with pancetta.

"I love bitter vegetables - give me a plate of these, with a tiny slice of turkey on the side and I'd be happy," he commented, indicating it could be a potential candidate for an alternative Christmas meal.

Bay leaves and garlic were key to his preparation method - but caterers could make their own stamp on the dish by trying something radical and new.
