Why not serve basil pancakes as a starter

Basil can be used as the key flavouring of a pancake

Chefs who enjoy cooking with basil could try serving basil pancakes as a vegetarian starter option.

Allegra McEvedy, author of the Bought, Borrowed & Stolen: Recipes and Knives from a Travelling Chef cookery book, recommended serving this dish with a culinary herb twist and ragu in an article for the Guardian.

Preparation of the ragu involves heating shallots and garlic in a pan with melted butter, before pouring in tomato sauce and allowing to simmer.

Cherry tomatoes are then added to the liquid and balsamic vinegar is stirred in.

Basil, spinach and brioche soaked in cream is blended into a pale green paste and seasoned to prepare the pancake mix, which is fried in a pan using a single desert spoon's worth for each pancake.

Those who enjoy blending Asian spices with pancakes could try making Sri Lankan chutneys with appams, which food writer Alice Hart recently suggested in the Daily Telegraph.
