Mix up Christmas with a barbecue turkey

Turkey can be barbecued for a Christmas meal with a difference

When considering new flavour ideas that will help put an alternative spin on a traditional Christmas dish, chefs could try simply adjusting their method of preparation.

For instance, it was suggested in the Guardian barbecuing turkey could be a simple option that is also quicker than preparing a conventional roast.

Methods that offer this advantage could be worth thinking about for those who have large bookings of guests ordering from festive menus.

The Guardian recipe involved stuffing the bird with squeezed lemon halves, rosemary and thyme, basting with the same ingredients - in addition to butter - and leaving to cook in a covered barbecue.

McCormick's resident expert Chef Steve recommends making sure coals are glowing white before placing meat on this equipment.

He also suggests adding pine cones among the coals for extra flavour.
