Spices can bring veggie curries to life

Curries do not have to contain meat

For non-meat eaters, there are still plenty of inspirational recipes for curries to whet their appetites.

Writing for Stuff.co.nz, Caroline Velik explains how to make split peas with cherry tomatoes and fresh curry leaves, which she describes as a "simple dhal or thick stew".

As well as the main ingredients of peas, tomatoes, garlic and the leaves, chefs will also require a number of spices including turmeric and chilli powder.

Alternatively, individuals may wish to try Bet.com's recipe for zucchini tomato curry.

This requires garam masala, ground cumin and ground coriander, all of which are combined with fresh garlic and ginger to flavour the main ingredients of tomatoes and zucchini, plus onion and lemon juice.

If none of these appeal and people prefer to have a little meat in their curries, they could give Desi Blitz's recipe for Punjabi masala chicken a go.

This dish makes use of ginger, garlic, garam masala, turmeric, black pepper and paprika.
