Cumin required for perfect hummus recipe

Many cooks may love the delicious dip

If people are looking for some new and inspirational recipes, they may want to try making what one writer has described as the "perfect" hummus.

Writing for the Guardian, Felicity Cloake - who has been writing professionally for five years and has her own recipe book - explained how to make this tasty dip.

To begin, chickpeas are placed in a bowl and covered in cold water. Bicarbonate of soda is then added to the liquid and it is left to soak for 24 hours.

Next, the chickpeas are put in a saucepan with more water and boiled until they become soft and mushy - which can take up to four hours.

Ms Cloake, who won 2011 Guild of Food Writers awards for Food Journalist of the Year and New Media of the Year, then said tahini should be mixed with lemon juice and crushed garlic before some of the chickpea cooking liquid is added.

All of the ingredients are blended in a food processor, with cumin, salt, more lemon juice and garlic combined with the mix.

She recommended sprinkling the finished dip with some paprika to add extra flavour.
