Cod and lentil recipe a great starter

Salt holds fish together while cooking

Fans of culinary seasonings could try a salted cod recipe that Angela Hartnett shared in the Guardian.

Hartnett, who is a chef patron of the Whitechapel Gallery and Dining Room in London, explained that salt does more than just preserve fish.

"Salting fish reduces its water content which allows the fibres to tighten and holds the fish together more while it cooks," she explained, specifying that this is the benefit of salting over buying frozen, dehydrated fish.

To make the dish, she recommended cooking potatoes in milk, water, thyme, garlic and a bay leaf.

She then suggested cooking cod with the same garnishes until it starts to flake.

For the lentil vinaigrette, Hartnett advised mixing vinegar with olive oil, lemon juice and apple juice before heating in a pan with courgette, lemon and chives.

She suggested serving in a bowl with toasted sourdough bread.

Hartnett was awarded an MBE in 2007 when she also published her first cookbook.
