Chillies and herbs add flavour to bean recipe

Herbs add flavour to this simple dish

Culinary herbs and spices are used to add flavour to a simple recipe from Hugh Fearnley-Wittingstall.

Writing for the Guardian, the TV chef offers tips on how to make borlotti beans with onion and garlic.

This recipe requires 400g of fresh beans, butter, a leek and two onions, as well as six cloves of garlic.

The beans are cooked in water with a bouquet garni made of one bay leaf, a sprig of thyme and three stalks of parsley.

Meanwhile, the butter is melted in a pan and plenty of herbs are added to bring extra flavour to the dish.

Thyme and chilli flakes, as well as salt and pepper are heated with the butter, along with the onions and leek, sage and parsley.

When cooked, the ingredients are combined and dressed with lemon juice and a little olive oil.

Eager cooks who love the flavour of thyme may also want to try Fearnley-Wittingstall's recipe for BBQ squid with lemon and thyme dressing.
