Try spicing seafood

Sardines can be stuffed with spices

Culinary spices are celebrated among caterers for a wide range of reasons, not least of which is their ability to bring something new to almost any recipe.

However, here at Schwartz for Chef, we recommend that chefs come up with their own flavour pairings in order to create something truly unique.

In order to do this, it could also be a good idea to think about new ways the ingredients can be introduced to other foods.

For instance, they are typically associated with eastern curry dishes, which can come in a wide range of options - chicken, seafood and so on.

So why not take the spices from a curry and apply them to a more traditional seafood dish?

In an article for the Independent, celebrity chef Bill Granger recommended stuffing sardines with chick peas, cumin, chillies and paprika.

This could turn out to be a big hit with diners and caterers could adapt Mr Granger's choice of spices into something of their own.
