Mustard and tarragon can complement a kidney dish

Mustard is vital in the kitchen

Culinary herbs have a wide range of uses that make them a staple for professionals in the catering industry.

For instance, they can create distinctive sauces that can either really set off a specific recipe, or be made in bulk and applied to a broader range of meals.

In an article for the Independent, celebrity chef Mark Hix suggested making a mustard sauce with tarragon to spoon over a dish of kidneys.

Here at Schwartz for Chef, we offer a range of mustards for both front of house and back of house use, which will be ideal for those wishing to follow this advice.

Preparation involved cooking shallots in butter for a couple of minutes, before stirring in both Dijon and whole grain mustard.

After this has simmered for a short time, cream is added and the liquid is brought to the boil until it has thickened, when it is seasoned and ready to serve.
