Fennel seeds are the fruit of the aromatic herb fennel.

Uses in the Kitchen
Toast and grind fennel seeds before adding to butter, parsley and lemon juice. Serve with freshly cooked trout. Smash fresh garlic with fennel seeds, salt, pepper and chilli and use as a rub for pork.

Origins
Fennel was once native only to the Mediterranean region, but now most Fennel is grown in India, China, Egypt and Turkey. In ancient Greece, it was considered a symbol of success. In more recent history, the Puritans referred to Fennel as the "meeting seed" as it was a favorite practice to chew the seeds during meetings.
