Cloves are the dried, unopened flower buds of a small evergreen tree.

Uses in the Kitchen
Make a delicious fruity sauce for duck or game by adding red wine, port and cherries to some cloves, a cinnamon stick and a bay leaf. Simmer until rich and glossy.

Origins
Cloves are believed to be native to the Molucca Islands of Indonesia. The name Cloves comes from the French "clou", meaning nail. From the 8th Century on, Cloves became one of the major spices in European commerce. Cloves were extremely costly and played an important part in world history.

Flavour & Aroma
Flavour is sweet and fruity, yet hot and bitter at the same time. It has a warm aroma with subtle pepper and camphor notes.
